I’ve barely cooked a thing over the last 6 weeks and when I did ‘cook’ it was things like salads where you just throw everything together and voila! We’ve had loads of fun things going on from festivals to friends visiting and weekends away. Cooking hasn’t exactly been a priority. Today is the first opportunity that I’ve had to prepare lunches for work for the coming week and it felt great!
I used a few chickpeas for a salad and with the leftovers, I decided to make hummus so that I also have a snack. Upstairs for thinking, downstairs for dancing! There are many variations of this tasty treat and you can change up the flavour by adding red peppers, caramelised onions, herbs…the world is your oyster. It is so incredibly easy, give it a go and you’ll probably never feel the need to buy a tub ever again!
- 1 tin chickpeas
- 1 large garlic clove
- 1 tsp Tahini
- Juice of 1 lemon
- 1 tbsp olive oil
- Salt and Pepper to taste
- Add all the ingredients into a blender and blitz until smooth
- Check seasoning and adjust to your personal taste
